1 kg fresh mussels, 3 red onions, 2 carrots, 1/2 celery root, 1 leek, 600 ml white wine, 1/2 untreated lemon, 2-3 bay leaves, 4-6 black peppercorns, Salt
1. Wash and clean the mussels, discarding mussels which are already open. Peel the onions and cut into eighths. Peel the carrots and celery, trim the leeks, then wash and cut both into large pieces.
2. Cut the lemon into quarters. Place about 1 1/2 liter water, 1/2 liter wine, the vegetables, bay leaves, peppercorns, lemon and salt in the roaster and bring to a boil.
3. Add the mussels, and close the roaster. Pour the rest of the white wine into the Saft-O-Matic, and simmer for about 10 min.
Serve with: Fresh baguette and herb butter
Fresh, uncooked mussels whose shells are already open should not be eaten. The same holds true for mussels which are closed after cooking.
